2 cups dried black beans (or 2 cans, drained and rinsed)
1 onion, chopped
2 cloves garlic, chopped
2 tsp each of oregano and cumin
¼ cup prepared salsa
1 cup brown rice
1 cup riced cauliflower
Toppings: shredded cheese, chopped cilantro, chopped avocado, sour cream
Put beans, onion, garlic and 6 cups water in the Instant pot and set for 45 minutes. (If you are using pre-cooked canned beans, skip the water and set IP for 15 minutes). Cook rice (according to package) with cauliflower on a stove in a pot with 2 cups of water or broth. Fluff when done.
Quick release the Instant pot and drain most of the water out. Mash the beans with the salsa, using an immersion blender or hand masher. Add spices and serve over rice.
