Ingredients:
1 large chicken breast
1 cup each of chopped carrots, celery, onion
8 cups broth (or bouillon + water)
8 oz package pasta (I like pappardelle, but any wide noodle or shape will do)
Directions:
Put all ingredients (except pasta) into the IP and set at manual for 22 minutes. Quick release and shred chicken. Put pasta in, close the lid and keep on warm for about 15-20 minutes (or you can switch to saute function and wait until boiling, then add pasta and cook for only about 8 minutes).
Vegan/Vegetarian option: leave out chicken and add bean of choice, use vegetable broth
No pasta option: use zoodles or other spiralized veggie.
