Buffalo Chickpea Potatoes

Ingredients:

2 potatoes – cooked

1/2 can chickpeas- rinsed and drained

1 cup diced/riced veggies (I used cauliflower and broccoli)

1/4 cup buffalo hot sauce

2-3 Tbsp vegan cream cheese, cashew cream, or other creamy vegan cheese

1 Tbsp each garlic powder, onion salt

Optional: 2 Tbsp shredded vegan cheese

Directions:

Bake the potatoes whole (oven, IP, microwave, etc). While potatoes are cooling, mash chickpeas in a bowl. Add veggies, buffalo sauce, vegan cheeses and spices. Mix well.

Cut potatoes in half horizontally, and scoop out some of the insides, leaving a border to keep shape. Add scooped out potatoes to chickpea mixture and stir until combined. Spoon mixture back into the potato halves. Put into 350F oven and bake for 20 minutes.
