Easy, nutritious snacks and meals that travel well. Make ahead preparations are necessary.

Pizza Dough Pinwheels- Created from pre-made pizza dough, a can that pops open or make your own (few ingredient dough).

Flatten into a rectangle, spread your toppings and roll up, stromboli-style. Slice carefully and bake at 350F for about 20 minutes or until browned.

Pack your favorite marinara to dip in. Eat within an hour or keep chilled with an ice pack.

Filling ideas:

  • shredded cheese
  • parmesan cheese
  • spiced up cream cheese
  • shredded veggies (carrots, zucchini, etc.)
  • other veggies (corn, spinach, chopped tomatoes, broccoli, etc.)
  • chopped cooked meatballs, sausage and pepperoni

Snack Box – Build your own snack box, based off of the formula: protein + veggies + fruit + whole grain. Keep chilled with an ice pack.

Proteins: Hard boiled egg, edamame, nut or seed butter, hummus, trail mix, cheese chunks or stick, mini meatballs, chunked cooked chicken, etc.

Veggies: carrots, celery, sliced cucumber, grape tomatoes, steamed broccoli or cauliflower, sliced peppers, etc.

Fruits: grapes, berries, sliced apples, mandarin oranges, kiwi halves (with a spoon to scoop), etc.

Whole grain: crackers, whole wheat pita, popcorn, mini rice cakes, etc.

Pie Crust Pockets– Created from pre-made pie crust, a can that pops open or make your own.

Slice the pie crust into 4 long strips. Fill on one end, leaving a border. Don’t use a filling that has too much liquid. Brush the edges with water or egg whites. Fold the other end over and use a fork or your fingers to pinch edges closed. Bake at 375F for about 25 minutes.

Eat within an hour or keep chilled with an ice pack.

Filling ideas:

  • spinach, artichoke and shredded cheese
  • black beans, cheddar and chopped tomatoes
  • sauteed shredded veggies and beans
  • chili and cheddar cheese
  • pizza toppings
  • buffalo sauce, shredded chicken and shredded carrots

Sandwich/Wrap – The old standby gets an update. There are lots of ways to fill a sandwich or wrap! Cut in half or in smaller bite sized pieces. Keep chilled with an ice pack.

Ideas:

  • Chocolate hazelnut spread with sliced banana or shredded apples
  • PBJ with sliced banana or shredded apples or chopped nuts
  • Herbed cream cheese spread with chopped or shredded veggies
  • deli meat, lettuce and shredded carrots
  • hummus, shredded carrots and sliced cucumber
  • refried beans, sliced tomatoes, shredded lettuce and avocado
  • BLT – with or without avocado or cheese
