Rainbow Broccoli Salad (Vegan, GF)

Ingredients

¼ head of purple cabbage, shredded

1 bunch broccoli, finely chopped

¼ sweet onion, finely sliced

1 carrot, shredded

1 apple, diced

Optional: dried cranberries, raisins, pumpkin seeds, sesame seeds

lemon, juiced

¼ cup tahini

1 cup raw cashews soaked 3-4 hours and drained

Garlic powder

Onion salt

Water

Directions

Toss vegetables and diced apple (and optional ingredients).

Blend rest of ingredients in a food processor or mini blender until smooth, adding water for consistency. 

Stir dressing into vegetables and refrigerate.
